Vegetable Stack- Serves 4

 

 

1 packet haloumi

4 large field mushrooms

1 large capsicum

1 large zucchini

cherry tomatoes optional

Olive oil

Salt & pepper

herbs or lettuce to dress (chives/ thyme)

Ferment It Sauerkraut or Kimchi or Beetroot, Apple & Ince Berry go well with this dish

 

Set oven to 200 degrees Celsius to warm oven.

Firstly cut all the vegetables into desired length. I believe it is best to leave the field mushrooms and cherry tomatoes as is.

Place all the vegetables onto a grease proof roasting tray and drizzle olive oil over them. Massage the vegetables a little and season with salt & pepper.

Place in oven for 20-25 mins at 220 degrees Celsius.

Slice haloumi into 2cm thick slices. Place on a non stick fry pan with a little olive oil.

Pan fry each side for a few minutes, be careful not to leave them alone or they may burn.

Place cooked haloumi onto a plate and dish up all vegetables evenly into a stack.

Chop herbs and sprinkle on top, be sure to add you Ferment It selection and enjoy!
